I am going to make dessert consisting of baked peaches with almond paste in the core. I don't particularly want to use almond paste, is there anything else with the right flavor and texture to go with baked peaches?
Marzipan or Peanut butter is as close as you'll get.

ok, so i just made peach cobbler for the first time, and it tastes yummy 
but it doesnt look like i thought it would...im not sure if it has the right texture either...the bread is not crisp like i was expecting....can anyone describe to me what it should be like?? thanks!!
Cobbler can be made with different kinds of dough. You can use puff pastry, phyllo dough or biscuit dough, etc.... all of which has different kinds of textures. The textures can range from crumbly to soft to flaky to chewy.
I would have to look at the recipe to give you a definite answer.
